Rooster in red wine and bay leaves (Kokkoras Krasatos with Dafni)
1 rooster cut in portions
½ cup olive oil
1 onion cut in cubes
2 cloves of garlic, finely chopped
2cups sweet red wine
5 tomatoes chopped
2 tbsp tomato paste, dissolved in water
1 tbsp black pepper in beans
4 bay leaves
Black pepper freshly ground
Cut the rooster in portions, wash and drain. Sauté in hot oil in a large pot, the rooster, onion and garlic. Pour the wine. Add gradually water and simmer until tender. Add the rest of the ingredients and simmer for 20 minutes.
Serve with French fries.
