Baked ‘Giant’ Beans with traditional sausages (Gigantes with Horiatiko Loukaniko)

Baked ‘Giant’ Beans with traditional sausages (Gigantes with Horiatiko Loukaniko)

Ingredients
½ kg giant beans

1/3 cup olive oil

1 large onion cut in cubes

4-5 spring onions cut in rings (not the leaves)

3 ripped fresh tomatoes, grated

1 tbsp tomato paste dissolved in warm water

2 traditional sausages cut in rings

1 tsp sweet red pepper

Vegetable broth or water

Salt

Preparation
Soak the beans for 12 hours. Drain them. Sauté the onions until golden, add the beans, tomato sauce, paste, red pepper and broth and simmer for 30 min. Sprinkle salt towards the end. Pour the mixture in a deep baking pan, add the sausages, stir and bake at 200οC for 30 min.
