Echar en un bol grande la harina y la sal y revolver. Hacer una especie de hoyo en el centro y agregar la levadura, el aceite de semillas, el vinagre y mezclar cuidadosamente. A\u00f1adir poco a poco el agua y amasar hasta obtener una masa suave y delicada. Cubrir bien y dejar reposar durante una hora para que fermente. Amasarde nuevo delicadamente, cortar peque\u00f1os trozos rectangularesde masa y entreabrirlos con las manos bien untadas en aceite para formar una especie de bollito alargadosobre una superficie enharinada. Machacar las patatas con un tenedor hasta obtener una especie de pur\u00e9. Fre\u00edr en el aceite hirviendo las cebollas picadas hasta que est\u00e9n doradas y a continuaci\u00f3n las patatas trituradas. Incorporar el perejil, el or\u00e9gano, la sal y la pimienta negra. Mezclar bien y dejar enfriar. Hacer un peque\u00f1o hueco en el centro delos bollitos para introducir una cucharada de relleno y sellar bien los bordes con ayuda de un poco de agua.
