Hacer movimientos circulares con la mano y trabajar la masa hasta que adquiera una forma redonda y compacta, con una consistencia suave pero no pegajosa. Cubrir y dejar reposar durante una hora. A continuaci\u00f3n, cortar en dos y amasar para obtener dos bolas que se colocar\u00e1n sobre una superficie enharinada. Con ayuda de un rodillo, amasar la pasta espolvore\u00e1ndola a menudo con harina hasta conseguir dos cuadrados. Enaceitar, doblar por la mitad, a\u00f1adir aceite de nuevo, volver a doblar y as\u00ed hasta conseguir un cuadrado con 16 porciones de pita. Dejar reposar la masa en el frigor\u00edfico durante unos 20 minutos. Abrir de nuevo las dos pastas con el rodillo: estas deber\u00e1n haber superado ligeramente el tama\u00f1o de la bandeja. La pita inferior deber\u00e1 sobresalir un poco, ya que se deber\u00e1 girar posteriormente, mientras que el pan que est\u00e1 encima de esta deber\u00e1 ser m\u00e1s grueso. Untar una bandeja de 40&#215;35 cm y estirar la primera pita. Engrasar con un poco de aceite y untar sobre la masa. Estirar la segunda pita de forma que adquiera algunos pliegues gruesos. Doblarlos bordes hacia dentro hasta que quede uniforme. Echar abundante aceite de oliva sobre toda la masa y rociar con algo de agua. Hacer peque\u00f1os cortes en las porciones de pan del tama\u00f1o y forma deseados, pero sin llegar a tocar la \u00faltima pita. Cocer en la \u00faltima rejilla durante aproximadamente 50 minutos en el horno precalentado a 180 grados.<\/p>\n<p>RELLENO DE QUESO<\/p>\n<p>&nbsp;<\/p>\n<p>Ingredientes:<\/p>\n<p>300 g de queso feta (poco salado)<\/p>\n<p>200 g de queso anthotiroo ricotta<\/p>\n<p>3 huevos<\/p>\n<p>Pimienta negra reci\u00e9n molida<\/p>\n<p>&nbsp;<\/p>\n<p>Elaboraci\u00f3n:<\/p>\n<p>En el caso de que el queso feta adquirido contenga mucha sal, habr\u00e1 que proceder a desalarlo introduci\u00e9ndolo en agua. Desmenuzar en peque\u00f1os trocitos junto con el queso anthotiroo ricotta e incorporar los huevos y la pimienta. Mezclar todo y esparcir por la sart\u00e9n con el pan pita.<\/p>\n<p>&nbsp;<\/p>\n<p>RELLENO DE ESPINACAS Y QUESO<\/p>\n<p>&nbsp;<\/p>\n<p>Ingredientes:<\/p>\n<p>\u00bd kg deespinacas<\/p>\n<p>1\/3 taza de aceite de oliva<\/p>\n<p>1 manojo de cebolletas frescas picadas<\/p>\n<p>\u00bd manojo de eneldo picado<\/p>\n<p>200 g de queso feta<\/p>\n<p>3 huevos<\/p>\n<p>Sal<\/p>\n<p>Pimienta negra reci\u00e9n molida<\/p>\n<p>&nbsp;<\/p>\n<p>Elaboraci\u00f3n:<\/p>\n<p>Lavar las espinacas y escaldarlas en una sart\u00e9n durante dos minutos. Escurrir y sofre\u00edr con las cebolletas en el aceite caliente. A\u00f1adir el eneldo, la sal y la pimienta. Una vez que se haya enfriado, incorporar el queso feta con los huevos y mezclar. Esparcir el relleno por la sart\u00e9n con la pita.<\/p>\n<p>&nbsp;<\/p>\n<p>RELLENO DE PUERRO Y CARNE<\/p>\n<p>&nbsp;<\/p>\n<p>Ingredientes:<\/p>\n<p>\u00bd kg de puerros<\/p>\n<p>400 g de carne de ternera picada<\/p>\n<p>1\/3 taza de aceite de oliva<\/p>\n<p>3 huevos<\/p>\n<p>Nuez moscada<\/p>\n<p>Or\u00e9gano<\/p>\n<p>Sal<\/p>\n<p>Pimienta de Cayena<\/p>\n<p>&nbsp;<\/p>\n<p>Elaboraci\u00f3n:<\/p>\n<p>Limpiar los puerros y reservar el tallo. Quitar las hojas superiores, lavarlas y picarlas. Sofre\u00edr en el aceite la carne picada y seguidamente echar los puerros. A\u00f1adir la sal, pimienta, nuez moscada y el or\u00e9gano. Mezclar bien y dejar enfriar. Incorporar los huevos al relleno.
