Stewed pork with leeks and celery (Hirino Prassoselino)
Ingredients
4 portions of pork (shoulder)
½ cup olive oil
Vegetable broth or water
1kg leeks
½ kg celery chopped
1 tbsp cornflour
Salt
Black pepper freshly ground
Avgolemono
2 eggs
1 lemon juiced
Preparation
Wash the leeks and cut in small pieces (3-4cm). Wash the meat and drain. Sauté the meat until golden brown, reduce the heat, pour water and simmer until tender. Once the liquid is absorbed add the leeks and stir, together with the celery, a bit of broth, salt, pepper and simmer for another 30 min.
Towards the end, dissolve the corn flour in water and pour it over the casserole. Whisk the avgolemono and pour it over the casserole.
