    Frumenty (Trahanas) with feta cheese and toasted bread

    Ingredients

    6 cups chicken stock or water

    2 tbsp butter

    1 cup trahanas

    1 tsp salt

    200gr grounded feta cheese

    4 slices toasted bread

    Preparation

    Bring chicken broth or water to boil, in goes Trahana and butter and stir well. Simmer for 6 – 7 minutes, or until trahana makes a lightly thick soup, constantly stirring. Add salt and the crumbled feta cheese and serve with toasted bread aside. You can sprinkle red pepper, as well.

    Variation:  You may cook Trahana with olive oil instead of butter and Greek yoghurt instead of feta cheese.

    Serves 4.
