    Baked Quinces (Kidonia Psita)

    4 large quinces

    3 cups sugar

    1 + ½ cups sweet red wine

    2 cups Coca-Cola

    10 cloves

    2 cinnamon sticks

    Whipped cream

    Spread the sugar on the baking dish. Cut the quinces in quarters and remove the seeds, but do not peel. Wash and place them on the baking dish, the cut side down. Pour the wine and Coca-Cola. Sprinkle the cloves and cinnamon and bake in pre-heated oven at 180οC for about 1 hour. Let it cool and garnish with whipped cream, if you like.
