Semolina Halva (Halvas Simigdalenios)
Ingredients
1 cup olive oil
2 cups coarse semolina
1 cup walnuts chopped
Ground cinnamon
SYRUP
4 cups water
3 cups sugar
1 vanilla bean
1 cinnamon stick
Preparation
Boil the syrup for 6-7 minutes. Remove the cinnamon stick. Sauté semolina and the walnuts and stir constantly. Turn high heat to medium and slowly add small amounts of the syrup to the semolina and keep on stirring. Remove the pot from the stove, cover the halva with a towel and let it rest for 15 minutes. Pour the halva mixture into a pudding mold or into individual bowls sprinkling with cinnamon.
